Description
A comforting and healthy chicken and noodles dish perfect for Christmas dinner, made easily in a crock pot.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 8 oz whole wheat egg noodles
- 1 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned.
- Transfer chicken to the crock pot.
- Add chicken broth, carrots, celery, onion, garlic, thyme, rosemary, and black pepper to the crock pot.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken using two forks.
- Add egg noodles and cook for an additional 20-30 minutes until noodles are tender.
- Garnish with fresh parsley before serving.
Notes
- Use whole wheat noodles for extra fiber.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
