Description

A comforting and healthy chicken and noodles dish perfect for Christmas dinner, made easily in a crock pot.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 8 oz whole wheat egg noodles
  • 1 tbsp olive oil
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned.
  2. Transfer chicken to the crock pot.
  3. Add chicken broth, carrots, celery, onion, garlic, thyme, rosemary, and black pepper to the crock pot.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred the chicken using two forks.
  6. Add egg noodles and cook for an additional 20-30 minutes until noodles are tender.
  7. Garnish with fresh parsley before serving.

Notes

  • Use whole wheat noodles for extra fiber.
  • Adjust seasoning to taste.
  • Store leftovers in an airtight container for up to 3 days.
