Description

A healthy Crockpot Chicken Tikka Masala recipe perfect for Christmas dinner. This dish is flavorful, easy to prepare, and packed with protein.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 1 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 tbsp grated ginger
  • 3 cloves garlic, minced
  • 1 large onion, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1/2 cup light coconut milk
  • Fresh cilantro for garnish


Instructions

  1. In a bowl, mix yogurt, lemon juice, cumin, paprika, turmeric, cinnamon, salt, ginger, and garlic.
  2. Add chicken cubes and coat evenly. Marinate for 30 minutes.
  3. Place diced onions in the Crockpot. Add marinated chicken on top.
  4. Pour diced tomatoes and chicken broth over the chicken.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Stir in coconut milk and cook for an additional 15 minutes.
  7. Garnish with fresh cilantro before serving.

Notes

  • For extra spice, add 1 tsp cayenne pepper.
  • Serve with brown rice or quinoa for a complete meal.
