A hearty and healthy Christmas dinner featuring a loaded potato and meatloaf casserole. Perfect for festive gatherings and family meals.
Ingredients
- 2 lbs lean ground beef
- 4 large russet potatoes, sliced thin
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 egg
- 1/4 cup breadcrumbs
- 1/4 cup milk
- Cooking spray
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground beef, egg, breadcrumbs, milk, garlic powder, onion powder, salt, and black pepper.
- Press the meat mixture into the bottom of a greased casserole dish.
- Layer the sliced potatoes on top of the meatloaf.
- Bake for 45 minutes or until potatoes are tender.
- Remove from oven and top with shredded cheddar cheese.
- Return to oven for 5 minutes to melt the cheese.
- Garnish with sour cream and green onions before serving.
Notes
- Use lean ground beef for a healthier option.
- For crispier potatoes, broil for the last 2-3 minutes.
- Leftovers can be stored in the fridge for up to 3 days.
