Description

A hearty and healthy Christmas dinner featuring a loaded potato and meatloaf casserole. Perfect for festive gatherings and family meals.


Ingredients

  • 2 lbs lean ground beef
  • 4 large russet potatoes, sliced thin
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/4 cup milk
  • Cooking spray


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground beef, egg, breadcrumbs, milk, garlic powder, onion powder, salt, and black pepper.
  3. Press the meat mixture into the bottom of a greased casserole dish.
  4. Layer the sliced potatoes on top of the meatloaf.
  5. Bake for 45 minutes or until potatoes are tender.
  6. Remove from oven and top with shredded cheddar cheese.
  7. Return to oven for 5 minutes to melt the cheese.
  8. Garnish with sour cream and green onions before serving.

Notes

  • Use lean ground beef for a healthier option.
  • For crispier potatoes, broil for the last 2-3 minutes.
