A healthy twist on a classic comfort food, perfect for a Christmas dinner. This Sloppy Joe Biscuit Casserole combines lean ground turkey, whole wheat biscuits, and a rich tomato sauce for a hearty yet nutritious meal.


Ingredients

  • 1 lb lean ground turkey
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 cup shredded low-fat cheddar cheese
  • 1 can (16 oz) whole wheat biscuit dough
  • 1/4 cup chopped fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet, cook ground turkey over medium heat until browned. Drain excess fat.
  3. Add onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
  4. Stir in diced tomatoes, tomato paste, Worcestershire sauce, chili powder, cumin, and smoked paprika. Simmer for 5 minutes.
  5. Spread the turkey mixture evenly in the baking dish. Sprinkle shredded cheese on top.
  6. Separate biscuit dough into individual biscuits and place them over the turkey mixture.
  7. Bake for 15-18 minutes, or until biscuits are golden brown.
  8. Garnish with fresh parsley before serving.
