A healthy twist on a classic comfort food, perfect for a Christmas dinner. This Sloppy Joe Biscuit Casserole combines lean ground turkey, whole wheat biscuits, and a rich tomato sauce for a hearty yet nutritious meal.
Ingredients
- 1 lb lean ground turkey
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1 cup shredded low-fat cheddar cheese
- 1 can (16 oz) whole wheat biscuit dough
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a skillet, cook ground turkey over medium heat until browned. Drain excess fat.
- Add onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
- Stir in diced tomatoes, tomato paste, Worcestershire sauce, chili powder, cumin, and smoked paprika. Simmer for 5 minutes.
- Spread the turkey mixture evenly in the baking dish. Sprinkle shredded cheese on top.
- Separate biscuit dough into individual biscuits and place them over the turkey mixture.
- Bake for 15-18 minutes, or until biscuits are golden brown.
- Garnish with fresh parsley before serving.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Replace turkey with ground chicken or lean beef if preferred.
- Use gluten-free biscuit dough for a gluten-free version.
