Description

Soft and chewy gingerbread cookies perfect for a healthy Christmas dinner. These cookies are spiced with ginger, cinnamon, and molasses for a warm holiday flavor.


Ingredients

  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1/3 cup coconut sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, beat butter and coconut sugar until creamy. Add molasses, egg, and vanilla. Mix well.
  4. Gradually add dry ingredients to wet ingredients. Stir until combined.
  5. Scoop dough into 1-inch balls and place on the baking sheet. Flatten slightly.
  6. Bake for 8-10 minutes. Let cool before serving.
