Description
A healthy gluten-free lasagna made with chickpea pasta, perfect for Christmas dinner.
Ingredients
- 12 oz chickpea pasta sheets
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jar (24 oz) marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 egg
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Cook chickpea pasta sheets according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until soft.
- Add ground turkey, oregano, basil, salt, and pepper. Cook until browned.
- Stir in marinara sauce and simmer for 5 minutes.
- In a bowl, mix ricotta cheese, egg, and half the mozzarella cheese.
- Layer pasta, turkey sauce, and ricotta mixture in a baking dish. Repeat layers.
- Top with remaining mozzarella cheese.
- Bake for 25 minutes or until bubbly and golden.
- Let cool for 5 minutes before serving.
Notes
- Use gluten-free marinara sauce if needed.
- Substitute ground turkey with lentils for a vegetarian option.
- Store leftovers in the fridge for up to 3 days.
