Description

A healthy gluten-free lasagna made with chickpea pasta, perfect for Christmas dinner.


Ingredients

  • 12 oz chickpea pasta sheets
  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F.
  2. Cook chickpea pasta sheets according to package instructions. Drain and set aside.
  3. Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until soft.
  4. Add ground turkey, oregano, basil, salt, and pepper. Cook until browned.
  5. Stir in marinara sauce and simmer for 5 minutes.
  6. In a bowl, mix ricotta cheese, egg, and half the mozzarella cheese.
  7. Layer pasta, turkey sauce, and ricotta mixture in a baking dish. Repeat layers.
  8. Top with remaining mozzarella cheese.
  9. Bake for 25 minutes or until bubbly and golden.
  10. Let cool for 5 minutes before serving.

Notes

  • Use gluten-free marinara sauce if needed.
  • Substitute ground turkey with lentils for a vegetarian option.
  • Store leftovers in the fridge for up to 3 days.
