A nutritious and festive Greek-inspired chicken farro salad bowl, perfect for a healthy Christmas meal.


Ingredients

  • 1 cup farro, cooked
  • 2 boneless, skinless chicken breasts, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper, to taste


Instructions

  1. Cook farro according to package instructions, then let cool.
  2. Grill chicken breasts until fully cooked, then slice into strips.
  3. In a large bowl, combine cooked farro, sliced chicken, cherry tomatoes, cucumber, red onion, and olives.
  4. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  5. Pour dressing over the salad and toss gently to combine.
  6. Sprinkle crumbled feta cheese on top before serving.

Notes

  • You can substitute farro with quinoa or brown rice.
  • For a vegetarian version, omit chicken and add chickpeas.
