Ingredients

  • 500g green beans, trimmed
  • 1 red onion, thinly sliced
  • 100g cherry tomatoes, halved
  • 50g feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste


Instructions

  1. Blanch green beans in boiling water for 3 minutes, then transfer to ice water.
  2. Drain and pat dry.
  3. In a bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper.
  4. Toss green beans, red onion, and cherry tomatoes with the dressing.
  5. Sprinkle crumbled feta cheese on top.
  6. Serve chilled.

Notes

  • You can add toasted almonds for extra crunch.
