Description
A fresh and healthy green bean salad perfect for Christmas gatherings. Light, crisp, and packed with flavor.
Ingredients
- 500g green beans, trimmed
- 1 red onion, thinly sliced
- 100g cherry tomatoes, halved
- 50g feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Blanch green beans in boiling water for 3 minutes, then transfer to ice water.
- Drain and pat dry.
- In a bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Toss green beans, red onion, and cherry tomatoes with the dressing.
- Sprinkle crumbled feta cheese on top.
- Serve chilled.
Notes
- You can add toasted almonds for extra crunch.
- Best served fresh but can be refrigerated for up to 2 days.
