Ingredients
- 2 cups rolled oats
- 1 cup protein powder (vanilla or unflavored)
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 cup unsweetened almond milk
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix oats, protein powder, almond flour, baking powder, and salt.
- In another bowl, whisk eggs, almond milk, honey, and vanilla extract.
- Combine wet and dry ingredients. Stir until smooth.
- Fold in chopped nuts if using.
- Pour batter into the loaf pan. Smooth the top.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 5 days.
- For extra flavor, add dried cranberries or cinnamon.
- Use gluten-free oats if needed.
