Description

A delicious and healthy lasagna you can make ahead and freeze, perfect for Christmas gatherings.


Ingredients

  • 12 lasagna noodles
  • 1 lb lean ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 cup part-skim ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions. Drain and set aside.
  3. Brown ground turkey with onion and garlic in a skillet over medium heat.
  4. Stir in marinara sauce, oregano, salt, and pepper. Simmer for 5 minutes.
  5. Mix ricotta cheese, egg, and spinach in a bowl.
  6. Layer noodles, turkey mixture, ricotta mixture, and mozzarella in a baking dish.
  7. Repeat layers, ending with mozzarella on top.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for 10 more minutes.
  9. Let cool for 10 minutes before serving.

Notes

  • Freeze before baking for up to 3 months.
  • Thaw overnight in the fridge before baking.
  • Use whole wheat noodles for extra fiber.
