Description
A delicious and healthy lasagna you can make ahead and freeze, perfect for Christmas gatherings.
Ingredients
- 12 lasagna noodles
- 1 lb lean ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jar (24 oz) marinara sauce
- 1 cup part-skim ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1 cup fresh spinach, chopped
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions. Drain and set aside.
- Brown ground turkey with onion and garlic in a skillet over medium heat.
- Stir in marinara sauce, oregano, salt, and pepper. Simmer for 5 minutes.
- Mix ricotta cheese, egg, and spinach in a bowl.
- Layer noodles, turkey mixture, ricotta mixture, and mozzarella in a baking dish.
- Repeat layers, ending with mozzarella on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for 10 more minutes.
- Let cool for 10 minutes before serving.
Notes
- Freeze before baking for up to 3 months.
- Thaw overnight in the fridge before baking.
- Use whole wheat noodles for extra fiber.
