A healthy lasagna recipe perfect for Christmas, designed to be made ahead and frozen for convenience.
Ingredients
- 12 lasagna noodles
- 1 lb lean ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jar (24 oz) marinara sauce
- 1 cup part-skim ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1 cup chopped spinach
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions.
- Brown ground turkey with onion and garlic in a skillet.
- Stir in marinara sauce, oregano, basil, salt, and pepper.
- Mix ricotta cheese, egg, and spinach in a bowl.
- Layer noodles, turkey mixture, ricotta mixture, and mozzarella in a baking dish.
- Repeat layers, ending with mozzarella on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for 10 more minutes.
- Let cool before freezing or serving.
Notes
- Freeze before baking for best results.
- Thaw overnight in the fridge before baking.
- Add extra vegetables like zucchini or mushrooms if desired.
