Description
A healthy and comforting Christmas soup with mushrooms and squash.
Ingredients
- 2 cups diced butternut squash
- 1 cup sliced mushrooms
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add mushrooms and squash, cook for 5 minutes.
- Pour in vegetable broth and add thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Blend until smooth if desired.
- Serve warm.
Notes
- Store leftovers in the fridge for up to 3 days.
- Garnish with fresh herbs before serving.
