Description

A healthy and comforting Christmas soup with mushrooms and squash.


Ingredients

  • 2 cups diced butternut squash
  • 1 cup sliced mushrooms
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add mushrooms and squash, cook for 5 minutes.
  4. Pour in vegetable broth and add thyme.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Blend until smooth if desired.
  8. Serve warm.
