Ingredients

  • 4 cups diced potatoes
  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup milk (or almond milk for lower lactose)
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped bacon and cook until crispy. Remove and set aside.
  3. In the same pot, sauté onion and garlic until soft.
  4. Add diced potatoes, chicken broth, and thyme. Bring to a boil.
  5. Reduce heat and simmer until potatoes are tender (about 15 minutes).
  6. Stir in milk and half the cooked bacon. Simmer for 5 more minutes.
  7. Season with salt and pepper.
