A hearty and healthy soup perfect for Christmas, combining potatoes and bacon for a comforting meal.
Ingredients
- 4 cups diced potatoes
- 6 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup milk (or almond milk for lower lactose)
- 1 tsp thyme
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped bacon and cook until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until soft.
- Add diced potatoes, chicken broth, and thyme. Bring to a boil.
- Reduce heat and simmer until potatoes are tender (about 15 minutes).
- Stir in milk and half the cooked bacon. Simmer for 5 more minutes.
- Season with salt and pepper.
- Serve hot, topped with remaining bacon.

- For a creamier texture, blend half the soup before adding milk.
- Use turkey bacon for a lower-fat option.
- Store leftovers in the fridge for up to 3 days.
