Description
A quick and healthy spinach kale soup perfect for a light Christmas meal.
Ingredients
- 4 cups fresh spinach
- 4 cups chopped kale
- 1 onion, diced
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, cook until soft.
- Pour in vegetable broth and bring to a boil.
- Add spinach and kale, simmer for 10 minutes.
- Season with salt and pepper.
- Serve hot.

- You can add lemon juice for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
