Description
A hearty and healthy slow cooker beef stew perfect for Christmas, packed with tender beef and vegetables.
Ingredients
- 1.5 lbs beef stew meat, cubed
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth (low-sodium)
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place beef, carrots, potatoes, onion, and garlic in the slow cooker.
- Pour beef broth over the ingredients.
- Add thyme, rosemary, bay leaf, salt, and pepper.
- Stir gently to combine.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Remove bay leaf before serving.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes of cooking.
- Use fresh herbs for best flavor.
