Description

A healthy version of classic French onion soup made in a slow cooker. Perfect for a cozy Christmas meal.


Ingredients

  • 6 large yellow onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 4 slices whole-grain bread
  • 1/2 cup shredded Swiss cheese


Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and cook until caramelized, about 20 minutes.
  2. Transfer onions to slow cooker. Add beef broth, vegetable broth, balsamic vinegar, thyme, garlic powder, and black pepper.
  3. Cover and cook on low for 6 hours.
  4. Toast whole-grain bread slices.
  5. Ladle soup into bowls. Top with toasted bread and shredded Swiss cheese.
  6. Broil for 2 minutes until cheese melts. Serve hot.
