Description
A healthy version of classic French onion soup made in a slow cooker. Perfect for a cozy Christmas meal.
Ingredients
- 6 large yellow onions, thinly sliced
- 4 cups low-sodium beef broth
- 2 cups vegetable broth
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 4 slices whole-grain bread
- 1/2 cup shredded Swiss cheese
Instructions
- Heat olive oil in a skillet over medium heat. Add onions and cook until caramelized, about 20 minutes.
- Transfer onions to slow cooker. Add beef broth, vegetable broth, balsamic vinegar, thyme, garlic powder, and black pepper.
- Cover and cook on low for 6 hours.
- Toast whole-grain bread slices.
- Ladle soup into bowls. Top with toasted bread and shredded Swiss cheese.
- Broil for 2 minutes until cheese melts. Serve hot.
Notes
- Slice onions evenly for even caramelization.
- Use low-sodium broth to control salt content.
- Swap Swiss cheese for mozzarella if preferred.
