A hearty breakfast casserole combining smoky pulled pork, mac and cheese, and a hint of bourbon for a festive twist.
Ingredients
- 2 cups cooked pulled pork
- 2 cups cooked macaroni
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 2 eggs
- 1/4 cup maple syrup
- 2 tbsp bourbon
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F.
- Mix pulled pork, macaroni, and cheese in a bowl.
- Whisk milk, eggs, maple syrup, bourbon, paprika, salt, and pepper in another bowl.
- Pour wet mixture over the pork and macaroni.
- Transfer to a greased baking dish.
- Bake for 30 minutes or until golden and set.
- Let rest for 5 minutes before serving.
Notes
- Use leftover pulled pork for convenience.
- Adjust bourbon to taste.
- Can be prepared ahead and refrigerated overnight.
