Description

A comforting and healthy noodle bake perfect for Christmas gatherings. This dish combines tender noodles with a creamy sour cream sauce and a cheesy topping.


Ingredients

  • 8 oz whole wheat egg noodles
  • 1 cup low-fat sour cream
  • 1 cup low-fat cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup chopped spinach (fresh or frozen)
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried oregano
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook noodles according to package directions. Drain and set aside.
  3. Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft.
  4. In a large bowl, mix sour cream, cottage cheese, Parmesan, spinach, salt, pepper, and oregano.
  5. Add cooked noodles and sautéed onion-garlic mixture to the bowl. Stir well.
  6. Transfer the mixture to a greased baking dish. Top with mozzarella cheese.
  7. Bake for 20-25 minutes until the cheese is golden and bubbly.
  8. Let it cool for 5 minutes before serving.

Notes

  • You can substitute cottage cheese with ricotta.
  • Add cooked lean ground turkey for extra protein.
  • Store leftovers in an airtight container for up to 3 days.
