Description
A comforting and healthy noodle bake perfect for Christmas gatherings. This dish combines tender noodles with a creamy sour cream sauce and a cheesy topping.
Ingredients
- 8 oz whole wheat egg noodles
- 1 cup low-fat sour cream
- 1 cup low-fat cottage cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chopped spinach (fresh or frozen)
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp dried oregano
- 1 tbsp olive oil
Instructions
- Preheat oven to 350°F (175°C).
- Cook noodles according to package directions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft.
- In a large bowl, mix sour cream, cottage cheese, Parmesan, spinach, salt, pepper, and oregano.
- Add cooked noodles and sautéed onion-garlic mixture to the bowl. Stir well.
- Transfer the mixture to a greased baking dish. Top with mozzarella cheese.
- Bake for 20-25 minutes until the cheese is golden and bubbly.
- Let it cool for 5 minutes before serving.
Notes
- You can substitute cottage cheese with ricotta.
- Add cooked lean ground turkey for extra protein.
- Store leftovers in an airtight container for up to 3 days.
