Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 6 eggs
- 1/2 cup milk
- 1/2 cup shredded cheese (optional)
- 1/4 cup chopped walnuts
Instructions
- Preheat your oven to 375°F (190°C).
- Toss the diced sweet potatoes with olive oil, cinnamon, nutmeg, and salt.
- Spread the sweet potatoes on a baking sheet and roast for 20 minutes.
- In a bowl, whisk the eggs and milk together.
- Layer the roasted sweet potatoes in a greased casserole dish.
- Pour the egg mixture over the sweet potatoes.
- Sprinkle cheese and walnuts on top.
- Bake for 25-30 minutes until the eggs are set.
- Let cool for 5 minutes before serving.
