Ingredients
- 1 cup mashed sweet potato
- 1/2 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a bowl, mix mashed sweet potato, maple syrup, coconut oil, and vanilla extract.
- Add almond flour, cocoa powder, baking powder, and salt. Stir well.
- Fold in dark chocolate chips.
- Pour the batter into the baking dish and spread evenly.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let it cool before slicing and serving.
Notes
- Use ripe sweet potatoes for best results.
- Store leftovers in an airtight container for up to 3 days.
- For extra richness, drizzle melted dark chocolate on top.
