Description
A creamy, dairy-free queso dip made with cashews, perfect for holiday gatherings.
Ingredients
- 1 cup raw cashews (soaked for 4 hours)
- 1/2 cup water
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp turmeric (for color)
- 1/4 cup diced roasted red peppers
- 1 tbsp olive oil
Instructions
- Drain soaked cashews and rinse.
- Blend cashews, water, nutritional yeast, lemon juice, garlic powder, onion powder, smoked paprika, salt, and turmeric until smooth.
- Heat olive oil in a pan over medium heat.
- Add the blended mixture and stir constantly for 3-5 minutes until thickened.
- Fold in diced roasted red peppers.
- Serve warm with chips or veggies.
Notes
- Soak cashews overnight for a creamier texture.
- Adjust salt and spices to taste.
- Store leftovers in an airtight container for up to 3 days.
