A creamy, dairy-free queso dip made with cashews, perfect for holiday gatherings.


Ingredients

  • 1 cup raw cashews (soaked for 4 hours)
  • 1/2 cup water
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp turmeric (for color)
  • 1/4 cup diced roasted red peppers
  • 1 tbsp olive oil


Instructions

  1. Drain soaked cashews and rinse.
  2. Blend cashews, water, nutritional yeast, lemon juice, garlic powder, onion powder, smoked paprika, salt, and turmeric until smooth.
  3. Heat olive oil in a pan over medium heat.
  4. Add the blended mixture and stir constantly for 3-5 minutes until thickened.
  5. Fold in diced roasted red peppers.
  6. Serve warm with chips or veggies.
