Description

A fresh and flavorful dish combining grilled chicken with a zesty cilantro-lime marinade, served over rice and topped with a sweet and spicy peach salsa.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 limes, juiced
  • 1/4 cup chopped cilantro
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cooked rice
  • 1 peach, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1/4 tsp salt


Instructions

  1. In a bowl, mix olive oil, lime juice, cilantro, garlic, salt, and pepper to make the marinade.
  2. Add chicken breasts to the marinade, coating evenly. Let sit for 30 minutes.
  3. Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked.
  4. While chicken cooks, mix diced peach, red onion, jalapeño, honey, lime juice, and salt in a bowl to make the salsa.
  5. Slice the cooked chicken into strips.
  6. Serve chicken over rice and top with peach salsa.

Notes

  • For a spicier salsa, leave the jalapeño seeds in.
  • Substitute peaches with mango if unavailable.
  • Use quinoa or cauliflower rice for a low-carb option.
