Description
A fresh and flavorful dish combining grilled chicken with a zesty cilantro-lime marinade, served over rice and topped with a sweet and spicy peach salsa.
Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 limes, juiced
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup cooked rice
- 1 peach, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1 tbsp honey
- 1 tbsp lime juice
- 1/4 tsp salt
Instructions
- In a bowl, mix olive oil, lime juice, cilantro, garlic, salt, and pepper to make the marinade.
- Add chicken breasts to the marinade, coating evenly. Let sit for 30 minutes.
- Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked.
- While chicken cooks, mix diced peach, red onion, jalapeño, honey, lime juice, and salt in a bowl to make the salsa.
- Slice the cooked chicken into strips.
- Serve chicken over rice and top with peach salsa.
Notes
- For a spicier salsa, leave the jalapeño seeds in.
- Substitute peaches with mango if unavailable.
- Use quinoa or cauliflower rice for a low-carb option.
