Description
A flavorful pasta salad inspired by the classic club sandwich. Combines pasta, chicken, bacon, and fresh veggies for a hearty dish.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup cooked chicken, diced
- 4 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
- Salt and pepper to taste
- 1/2 cup shredded lettuce
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, mix mayonnaise, sour cream, Dijon mustard, and lemon juice.
- Add cooked pasta, chicken, bacon, tomatoes, cucumber, and red onion to the bowl.
- Toss until all ingredients are coated with the dressing.
- Season with salt and pepper.
- Refrigerate for at least 30 minutes before serving.
- Top with shredded lettuce just before serving.
Notes
- Use rotisserie chicken for a quick option.
- Add avocado for extra creaminess.
