Description

A flavorful pasta salad inspired by the classic club sandwich. Combines pasta, chicken, bacon, and fresh veggies for a hearty dish.


Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 cup cooked chicken, diced
  • 4 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1/2 cup shredded lettuce


Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, mix mayonnaise, sour cream, Dijon mustard, and lemon juice.
  3. Add cooked pasta, chicken, bacon, tomatoes, cucumber, and red onion to the bowl.
  4. Toss until all ingredients are coated with the dressing.
  5. Season with salt and pepper.
  6. Refrigerate for at least 30 minutes before serving.
  7. Top with shredded lettuce just before serving.
