Description
A hearty and flavorful soup inspired by Dolly Parton’s Stampede. This copycat version brings the taste of the South to your kitchen.
Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup corn kernels
- 1 cup green beans, chopped
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add ground beef and cook until browned.
- Stir in beef broth, diced tomatoes, and tomato sauce.
- Add corn, green beans, paprika, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot.
Notes
- For a thicker soup, add 1 tablespoon of cornstarch mixed with water.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
