Ingredients
- 1 lb ground beef
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 box (8.5 oz) cornbread mix
- 1/2 cup milk
- 1 egg
- 1/4 cup diced onions
- 1 tsp chili powder
- 1/2 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef with onions in a skillet and drain excess fat.
- Stir in corn, black beans, chili powder, and salt.
- Transfer the mixture to a greased casserole dish.
- In a bowl, combine cornbread mix, milk, and egg. Pour over the beef mixture.
- Sprinkle shredded cheese on top.
- Bake for 20-25 minutes or until cornbread is golden.
