A hearty and flavorful pasta salad with a cowboy-inspired twist. Perfect for picnics, barbecues, or a quick meal.
Ingredients
- 8 oz rotini pasta
- 1 lb ground beef
- 1 cup corn kernels
- 1 cup black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup cheddar cheese, shredded
- 1/4 cup cilantro, chopped
- 1/2 cup ranch dressing
- 1/4 cup barbecue sauce
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- In a large bowl, combine the cooked pasta, ground beef, corn, black beans, cherry tomatoes, red onion, cheddar cheese, and cilantro.
- In a small bowl, mix the ranch dressing, barbecue sauce, chili powder, and garlic powder.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- For a spicier kick, add diced jalapeños.
- Substitute ground turkey for a lighter option.
- Store leftovers in an airtight container for up to 3 days.
