Description

A hearty and flavorful pasta salad with a cowboy-inspired twist. Perfect for picnics, barbecues, or a quick meal.


Ingredients

  • 8 oz rotini pasta
  • 1 lb ground beef
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup cilantro, chopped
  • 1/2 cup ranch dressing
  • 1/4 cup barbecue sauce
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. In a large bowl, combine the cooked pasta, ground beef, corn, black beans, cherry tomatoes, red onion, cheddar cheese, and cilantro.
  4. In a small bowl, mix the ranch dressing, barbecue sauce, chili powder, and garlic powder.
  5. Pour the dressing over the pasta mixture and toss to coat evenly.
  6. Season with salt and pepper to taste.
  7. Chill for at least 30 minutes before serving.
