Description
A hearty and creamy soup made with cabbage and white beans, perfect for a comforting meal.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups shredded cabbage
- 2 cups vegetable broth
- 1 can (15 oz) white beans, drained and rinsed
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup heavy cream or coconut milk
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cook until softened.
- Stir in cabbage and cook for 5 minutes.
- Pour in vegetable broth and bring to a simmer.
- Add white beans, thyme, salt, and pepper.
- Simmer for 15-20 minutes until cabbage is tender.
- Stir in cream or coconut milk and heat through.
- Serve warm.
Notes
- For a vegan version, use coconut milk instead of cream.
- Store leftovers in an airtight container for up to 3 days.
