Description
A creamy and comforting soup with all the flavors of a classic chicken pot pie.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup peas
- 1/2 cup onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
Instructions
- Melt butter in a large pot over medium heat.
- Add onions, carrots, and celery. Cook until softened.
- Stir in flour and cook for 1 minute.
- Gradually pour in chicken broth while stirring.
- Bring to a simmer and cook until slightly thickened.
- Add chicken, peas, salt, pepper, and thyme.
- Stir in heavy cream and heat through.
- Serve hot.
Notes
- Use leftover rotisserie chicken for convenience.
- Add biscuits or pie crust pieces for extra texture.
- Store leftovers in the fridge for up to 3 days.
