  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until softened.
  3. Stir in flour and cook for 1 minute.
  4. Slowly pour in chicken broth while stirring to avoid lumps.
  5. Add chicken, thyme, salt, and pepper. Simmer for 15 minutes.
  6. Stir in heavy cream and heat for another 5 minutes.
  7. Serve hot.
