Description
A creamy and flavorful pasta salad with a southwest twist. Perfect for picnics, potlucks, or as a side dish.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh or canned)
- 1 red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine black beans, corn, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and black pepper.
- Add cooled pasta to the large bowl with vegetables.
- Pour dressing over the pasta and vegetables. Toss until well coated.
- Refrigerate for at least 1 hour before serving.
Notes
- For extra spice, add diced jalapeños.
- Substitute Greek yogurt for sour cream if desired.
- Best served chilled.
