Description

A creamy and flavorful pasta salad with a southwest twist. Perfect for picnics, potlucks, or as a side dish.


Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine black beans, corn, red bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and black pepper.
  4. Add cooled pasta to the large bowl with vegetables.
  5. Pour dressing over the pasta and vegetables. Toss until well coated.
  6. Refrigerate for at least 1 hour before serving.

Notes

  • For extra spice, add diced jalapeños.
  • Substitute Greek yogurt for sour cream if desired.
  • Best served chilled.
