Description
A creamy and comforting broccoli cheese soup made easily in your crockpot.
Ingredients
- 4 cups broccoli florets
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Add broccoli, onion, garlic, and broth to the crockpot.
- Cook on low for 4 hours or high for 2 hours.
- In a saucepan, melt butter and whisk in flour to make a roux.
- Slowly stir in heavy cream until smooth.
- Pour the cream mixture into the crockpot and stir.
- Add shredded cheese and stir until melted.
- Season with salt and pepper.
- Serve hot.

- Use fresh broccoli for best texture.
- Shred your own cheese for smoother melting.
- For extra flavor, add a pinch of nutmeg.
