Description
A simple and flavorful soup made with chicken, tomatoes, beans, and spices in a crockpot.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Add black beans, corn, diced tomatoes, onion, and garlic.
- Sprinkle taco seasoning, cumin, chili powder, salt, and pepper over the ingredients.
- Pour chicken broth over everything.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken with forks before serving.
- Serve with toppings like shredded cheese, sour cream, or avocado.
Notes
- You can use frozen chicken breasts.
- Adjust spice levels to your preference.
