Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, sliced
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- Serve over rice or quinoa with red onion, cherry tomatoes, cucumber, feta cheese, and olives.

- You can use chicken thighs for more flavor.
- Add fresh parsley for extra freshness.
