Description
A creamy and comforting soup made with potatoes, broccoli, and cheddar cheese, cooked to perfection in a crockpot.
Ingredients
- 4 cups potatoes, diced
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Add potatoes, broccoli, onion, garlic, vegetable broth, salt, pepper, and thyme to the crockpot.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Stir in heavy cream and shredded cheddar cheese.
- Cook for an additional 30 minutes until the cheese is melted.
- Serve hot and enjoy.
Notes
- You can blend half the soup for a thicker texture.
- Add more cheese for extra creaminess.
- Substitute heavy cream with milk for a lighter version.
