Ingredients
- 1 lb beef stew meat, cubed
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb scallops
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Add beef, onion, garlic, tomatoes, broth, salt, pepper, and thyme to the crockpot.
- Cook on low for 6-7 hours or until beef is tender.
- Stir in shrimp, scallops, and mixed vegetables.
- Cook for an additional 30 minutes or until seafood is done.
- Serve hot.
