Description
A hearty and flavorful sweet potato chili made in a crockpot. Perfect for a cozy meal.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 2 cups vegetable broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Add all ingredients to the crockpot.
- Stir to combine.
- Cover and cook on low for 6 hours or high for 3 hours.
- Stir occasionally.
- Serve hot.

- Top with avocado or cilantro if desired.
