Description

A simple and flavorful crockpot taco casserole that’s perfect for busy weeknights. Layer ground beef, beans, cheese, and tortillas for a hearty meal.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 6 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro


Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Stir in taco seasoning, black beans, diced tomatoes, and corn. Cook for 2-3 minutes.
  3. Layer half the tortilla strips in the bottom of the crockpot.
  4. Spread half the beef mixture over the tortillas, then sprinkle with half the cheese.
  5. Repeat layers with remaining tortillas, beef mixture, and cheese.
  6. Cover and cook on low for 3-4 hours or until heated through.
  7. Serve with sour cream and cilantro on top.

Notes

  • Use lean ground beef for less grease.
  • Swap corn tortillas for flour tortillas if preferred.
  • Add jalapeños for extra spice.
