Description
A hearty and easy-to-make breakfast casserole with tater tots, eggs, cheese, and sausage cooked in a crockpot.
Ingredients
- 1 lb breakfast sausage
- 6 large eggs
- 1 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 cups shredded cheddar cheese
- 1 (32 oz) package frozen tater tots
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
Instructions
- Brown the sausage in a skillet over medium heat. Drain excess grease.
- In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Layer half the tater tots in the crockpot.
- Spread half the sausage, bell peppers, onions, and cheese over the tater tots.
- Repeat layers with remaining ingredients.
- Pour the egg mixture evenly over the layers.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Let it rest for 10 minutes before serving.
Notes
- You can substitute turkey sausage for a lighter option.
- Add hot sauce for extra spice.
- Store leftovers in the fridge for up to 3 days.
