Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1 red bell pepper, sliced
- 1 cup shredded carrots
- 1/2 cup chopped green onions
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey
- 1 tsp ginger, minced
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes
- 1/4 cup chopped peanuts (for garnish)
Instructions
- Place chicken thighs in the crockpot.
- Add bell pepper, carrots, and green onions.
- In a bowl, mix peanut butter, soy sauce, lime juice, honey, ginger, garlic, and red pepper flakes.
- Pour the sauce over the chicken and vegetables.
- Cook on low for 6 hours or high for 3 hours.
- Shred the chicken with forks.
- Serve over rice and garnish with chopped peanuts.
Notes
- Use natural peanut butter for best results.
- Adjust red pepper flakes for desired spiciness.
