Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp ginger, minced
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped peanuts (for garnish)


Instructions

  1. Place chicken thighs in the crockpot.
  2. Add bell pepper, carrots, and green onions.
  3. In a bowl, mix peanut butter, soy sauce, lime juice, honey, ginger, garlic, and red pepper flakes.
  4. Pour the sauce over the chicken and vegetables.
