Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 peaches, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1 tbsp honey
- 1/4 cup fresh mint, chopped
- 2 cups cooked rice or quinoa
Instructions
- Marinate chicken with cilantro, lime juice, garlic, olive oil, salt, and pepper for 30 minutes.
- Grill or pan-sear chicken until fully cooked, about 6-8 minutes per side.
- Combine peaches, red onion, jalapeño, honey, and mint to make the salsa.
- Slice the cooked chicken.
- Serve chicken over rice or quinoa and top with peach salsa.
