Ingredients
- 1 lb ground Cajun sausage
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups all-purpose flour
- 3 eggs
- 1 tbsp olive oil
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Mix flour and eggs to form a dough. Knead for 5 minutes, then rest for 30 minutes.
- Brown sausage in a pan. Drain excess fat and mix with ricotta, Parmesan, and Cajun seasoning.
- Roll dough thin and cut into circles. Place filling in the center, fold, and seal edges.
- Boil ravioli for 3-4 minutes until they float.
- Heat olive oil, sauté garlic, add cream, and simmer for 5 minutes.
- Toss cooked ravioli in the sauce. Garnish with parsley and serve.

- For a spicier kick, add extra Cajun seasoning.
- Fresh pasta cooks faster than dried.
- Substitute half-and-half for a lighter sauce.
