Description
A hearty and easy-to-make lasagna soup cooked in a crockpot. Perfect for a comforting meal with minimal effort.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
Instructions
- Brown the ground beef, onion, and garlic in a skillet over medium heat. Drain excess fat.
- Transfer the beef mixture to the crockpot.
- Add beef broth, diced tomatoes, tomato sauce, basil, oregano, salt, and pepper. Stir well.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Add the broken lasagna noodles 30 minutes before serving.
- Stir in ricotta cheese before serving.
- Top with mozzarella and Parmesan cheese.
Notes
- Use ground turkey for a lighter option.
- Add spinach for extra greens.
- Store leftovers in the fridge for up to 3 days.
