Description
A hearty and nutritious soup combining the flavors of hamburger and macaroni.
Ingredients
- 1 lb lean ground beef
- 1 cup diced onions
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup elbow macaroni
- 1 cup diced carrots
- 1 cup diced celery
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add onions and garlic, sauté until softened.
- Stir in carrots and celery, cook for 5 minutes.
- Pour in beef broth and diced tomatoes, bring to a boil.
- Add macaroni, oregano, and basil. Reduce heat and simmer for 10-12 minutes.
- Season with salt and pepper. Serve hot.
Notes
- Use whole wheat macaroni for extra fiber.
- Store leftovers in an airtight container for up to 3 days.
