Description
A nutritious and flavorful salad combining fresh green beans, crispy bacon, and sharp cheddar cheese.
Ingredients
- 1 lb fresh green beans, trimmed
- 4 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Blanch the green beans in boiling water for 3 minutes, then transfer to ice water.
- Drain the beans and pat dry.
- In a bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
- Toss the green beans with the dressing.
- Add bacon, cheddar, and red onion.
- Mix well and serve chilled.
Notes
- Store leftovers in an airtight container for up to 2 days.
- For extra crunch, add toasted almonds.
