Description

A nutritious and flavorful salad combining fresh green beans, crispy bacon, and sharp cheddar cheese.


Ingredients

  • 1 lb fresh green beans, trimmed
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste


Instructions

  1. Blanch the green beans in boiling water for 3 minutes, then transfer to ice water.
  2. Drain the beans and pat dry.
  3. In a bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
  4. Toss the green beans with the dressing.
  5. Add bacon, cheddar, and red onion.
  6. Mix well and serve chilled.
