Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 cup compliant BBQ sauce
- 1 cup cooked cauliflower rice
- 1/2 avocado, sliced
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 lime, juiced
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, then cook for 6-7 minutes per side until done.
- Brush BBQ sauce on chicken and cook for an additional 1-2 minutes.
- Slice chicken into strips.
- Assemble bowl with cauliflower rice, chicken, avocado, red onion, and cilantro.
- Drizzle lime juice over the top before serving.

- Use a Whole30-compliant BBQ sauce.
- Swap cauliflower rice for regular rice if not following Whole30.
