Ingredients
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup ricotta cheese
- 1 tbsp lemon juice
- 1/4 cup honey
- 1/2 tsp chili flakes
Instructions
- Preheat oven to 400°F.
- Toss carrots with olive oil, salt, and pepper.
- Roast carrots for 25 minutes until tender and caramelized.
- While carrots roast, whip ricotta with lemon juice until smooth.
- Combine honey and chili flakes in a small saucepan, heat for 2 minutes.
