Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cups enchilada sauce
- 10 corn tortillas
- 2 cups shredded cheese
- 1 can black beans, drained
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
Instructions
- Preheat oven to 375°F.
- Brown the beef and onion in a skillet.
- Add spices and black beans, then simmer for 5 minutes.
- Layer tortillas, beef mixture, sauce, and cheese in a baking dish.
- Repeat layers and top with remaining cheese.
- Bake for 20 minutes or until bubbly.
