Description
A simple and healthy cabbage soup that’s easy to make.
Ingredients
- 1 medium cabbage, chopped
- 2 carrots, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot.
- Add onion and garlic, cook until soft.
- Add carrots and cabbage, cook for 5 minutes.
- Pour in vegetable broth and diced tomatoes.
- Season with salt and pepper.
- Simmer for 20 minutes.
- Serve hot.
Notes
- You can add other vegetables like celery or potatoes.
- Store leftovers in the fridge for up to 3 days.
- Freeze for longer storage.
