Ingredients
- 1 lb ground beef
- 1 cup uncooked rice
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes (14.5 oz)
- 1 cup water
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F.
- Brown ground beef in a skillet over medium heat.
- Drain excess fat and stir in taco seasoning.
- In a baking dish, combine rice, diced tomatoes, water, and seasoned beef.
- Cover and bake for 25 minutes.
- Remove cover, sprinkle cheese on top, and bake for another 10 minutes.
- Garnish with sour cream and cilantro before serving.
Notes
- You can use any type of cheese you prefer.
- Add black beans or corn for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
