Crispy oven-roasted potatoes coated in a cheesy ranch seasoning for a flavorful side dish.
Ingredients
- 2 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, ranch seasoning, garlic powder, black pepper, and salt.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 30 minutes, stirring halfway.
- Sprinkle cheddar and parmesan cheese over potatoes.
- Return to oven for 5-10 minutes until cheese melts.
- Serve warm.
Notes
- Use russet potatoes if baby potatoes are unavailable.
- Adjust seasoning to taste.
- For extra crispiness, broil for 1-2 minutes after baking.
